1½ lbs.
thinly sliced beef, flank steak, or Philly beef steak slices
¼ cup
cornstarch
2 tbsp.
peanut oil
Rice for serving
Easy BBQ Mongolian Beef Sauce
1 tsp.
sesame oil
3 tsp.
fresh ginger, grated
2 cloves
garlic, grated
1 cup
soy sauce
1 cup
beef stock
½
lime, juiced
½ cup
brown sugar
1 tbsp.
cornstarch
Sliced red chili peppers, fresh chives, sesame seeds for garnish
- Remove one set of cooking grids and replace them with the drop-in roasting pan if using.
- Cut the pre-sliced beef to ensure that each morsel is more bite-sized unless you aren’t using beef that is already sliced. Then slice the beef as thin as possible. Toss the beef with cornstarch and set aside to prep everything else.
- In a bowl, whisk together the soy sauce, beef stock, lime juice, and brown sugar.
- Turn on the main burners, preheating the ones below the drop-in roasting pan to medium-high.
- Add the peanut oil and, working in batches, fry the beef until they crisp a little on both sides. You can either move the cooked beef to the front of the grill where it is cooler or place a tray onto the warming rack to hold the cooked beef until you’re ready for it again later.
*Optional. Add another round of oil and do a second fry on the beef for extra crispiness. Make sure that you use a very tender cut of beef for this, flank steak is not ideal in this situation. - Once all of the beef is cooked, add 1 more tsp. of sesame oil to the drop-in pan. Fry the garlic for a moment or two, then add the garlic, continuing to cook for another minute. Remove 1 tbsp. of the soy sauce mixture and combine it with the cornstarch. Add the remaining soy sauce mixture to the drop-in pan. Add the cornstarch mixture and allow the sauce to begin to simmer.
- Add the beef back in (or just move it from the front of the pan) and allow everything to simmer for about 3 minutes or until the sauce gets nice and thick.
- Serve the beef over a bed of fresh and steamy rice, topped with chili pepper slices, sesame seeds, and/or fresh snipped chives. Don’t forget your favorite seasonal veggie too.
