Ingredients
  • 2 racks ribs
  • 1 lb. (0.5 kg) wings, split
  • 1 cup (approx. 200 g) chicken & rib rub
  • 3 tbsp. (39 g) brown sugar
  • 1 envelope (3.9 g) Black Cherry Kool-Aid
  • Charcoal
  • Cherry wood chips
  • Butter

Glaze:

  • 3 tbsp. honey
  • 2 tbsp. BBQ sauce
  • 1 envelope (3.9 g) Black Cherry Kool-Aid

Alabama White BBQ Sauce:

  • 1 cup (250 ml) mayonnaise
  • ¼ cup (60 ml) apple cider vinegar
  • 2 tbsp. fresh lemon juice
  • 1 tsp. Worcestershire sauce
  • 1 tsp. kosher salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp.  freshly ground pepper
Method
  1. Remove the membrane from the back of your ribs.
  2. In a bowl combine your favorite chicken and rib rub with the brown sugar and Kool-Aid. Thoroughly season the wings and ribs with the rub. Optionally, set them all on a rack and allow them to dry brine in the fridge overnight.
  3. Preheat your BBQ to 225°F (107°C), preparing to use indirect heat.
  4. When you are ready to get BBQing, add cherry wood chunks to the charcoal at various positions. If you are using a gas BBQ, then soak cherry wood chips and fill the smoker box or pipe and position over the lit burner. Alternatively, Place a BBQ wok with holes over the sear plates of the lit burner and add cherry wood chunks to that.
  5. Smoke the ribs for 3 hours. Wrap the ribs after 3 hours, adding a few pats of butter to the ribs before sealing them up. Return them to the BBQ to cook for another hour.
  6. After that hour, increase the temperature of the BBQ to 250°F (121°C). Arrange the wings on the cooking grids and add more cherry wood for smoke. Continue smoking for an hour.
  7. In a bowl, combine the honey, BBQ sauce, and another envelope of Kool-Aid. Brush this mixture generously over the ribs and wings to glaze them while they finish cooking.
  8. Once the wings reach an internal temperature of 165°F (74°C) remove them and the ribs from the BBQ and rest.
  9. Serve them all together with the Alabama White Sauce for dipping. Don’t forget your favorite sides, and a good drink too.
