  • 3 large eggs, room temperature
  • ¾ cup (176 ml) milk, room temperature
  • ¾ cup (90 g) all-purpose flour
  • Pinch of salt
  • 3 tbsp. butter

To Serve

  • 4 eggs, poached
  • 1 cup (140 g) soft unripened goat’s cheese
  • 1 sweet onion, sliced thin
  • 2 tbsp. butter
  • 1 tbsp. oil
  • Bacon, cooked, optional
Method
  1. Preheat your barbecue to 450°F (232°C) preparing to use indirect heat. Put a cast iron frying pan onto the grill to preheat as the BBQ warms.
  2. In a blender or a food processor, combine the eggs, milk, flour, and salt. Blend for 15 to 20 seconds until smooth. Allow this to rest and come as close to room temperature as possible before working with it.
  3. In a sauté pan over low heat, add 2 tbsp. butter and 1 tbsp. oil, then caramelize the onions slowly as you work on other things.
  4. In a bowl, break up the goat's cheese and then combine that with most of the caramelized onions. Drop about ⅔ of the cheese mixture into the batter, reserving the rest to top the Dutch Baby when it comes out of the BBQ.
  5. Using heat-resistant barbecue gloves, remove the hot pan from the grill and place it onto a heat-safe surface. Add the butter to the cast iron frying pan. Swirl it around and coat the pan, allowing the butter to sizzle.
  6. Pour the batter over the sizzling butter and sprinkle the crumbled goat’s cheese over the batter. Return the frying pan to the BBQ and bake using indirect heat for 20 to 25 minutes until puffed and golden.
  7. Using heat-resistant gloves, remove the cast iron pan from the grill and turn the Dutch Baby out onto a serving platter. Top the Dutch Baby with the extra caramelized onions, optional bacon, the remaining goat’s cheese, and poached eggs. Serve immediately.
