  • 2 to 4 corn on cob
  • 3 tbsp. butter, melted
  • 1 cup (148 g) smoked beef
  • BBQ Sauce to taste
  • ¼ cup (60 g) sour cream
  • ¼ cup (60 g) mayonnaise
  • ½ lime, juiced
  • ¼ cup (30 g) cotija cheese crumbled, sub feta
  • Cilantro
  • 1 package restaurant-style tortilla chips
  • 1 cup (120 g) shredded Oaxaca cheese, sub mozzarella
  • 1 red onion, sliced
  • 1 green pepper, sliced
  • Hot peppers to taste
  • Limes for garnish
Method
  1. Slice the onion and peppers, mince the cilantro, crumble the cotija, and grate the cheese. Set aside.
  2. Preheat the barbecue to 400°F (200°C), igniting all burners to medium.
  3. Shuck the corn and place the shredded beef onto a tray or into a heat-safe dish. Drizzle the beef with BBQ sauce to taste and melt the butter.
  4. Heat the beef and cook the corn, brushing frequently with butter and turning every 3 to 4 minutes until bright in color and a little charred.
  5. Remove the corn and beef from the grill when cooked. Allow the corn to cool until you can handle it safely. While waiting, mix the sour cream, mayonnaise, and lime. Carefully cut the corn from the cob.
  6. On a tray or stainless steel pizza pan, layer the tortilla chips, shredded cheese, sliced veggies, corn, and warm beef.
  7. Place back onto the grill until the cheese is melted and bubbly. Remove from heat and garnish with any remaining corn, a drizzle of the sour cream mixture, and top with the cotija and minced cilantro. Enjoy.
