Ingredients
  • 1 lbs. (0.5 kg) unsplit chicken wings
  • 1 tbsp. salt
  • 2 tsp. baking powder
  • ¼ cup (34 g) Jamaican jerk seasoning
  • 2 tbsp. (13 g) brown sugar
  • 2 cloves garlic, crushed
  • 3 whole green onions, trimmed
  • 1 lime, juiced
  • 2 tbsp. (30 ml) neutral oil
  • 1 to 5 scotch bonnet peppers
  • ¼ to ½ tsp. Black Gel Food Coloring (Wilton brand suggested)

Cooling Coconut Dip

  • ½ cup (123 g) unsweetened coconut yogurt
  • 1 lime, zested and juiced
  • ½ tsp. salt
  • ¼ tsp. garlic powder
  • Garnish with chopped cilantro
Method
  1. The night before, toss wings in a mixture of salt and baking powder. Place on a rack set into a baking sheet and allow them to dry in the fridge, uncovered until you are ready to grill. Approximately 24 hours.
  2. When you are ready to cook, combine the jerk seasoning, sugar, garlic, green onion, lime juice, and oil in a blender. Up the heat by adding scotch bonnet peppers. Blend until smooth. Add the gel food coloring, a little at a time, until you have a deep black color. 
  3. In a stainless steel bowl, while wearing gloves, combine the jerk sauce with the dried chicken wings, tossing until well coated. 
  4. When you’re ready to grill, preheat the grill to 400°F (200°C) using the rear burner. 
  5. Spray the Napoleon Rotisserie Basket with nonstick and then fill it with the wings. 
  6. Grill the wings in the rotisserie basket for 60 minutes, or until 160°F (71°C) inside.
  7. While waiting for the wings to cook, combine the yogurt, lime juice and zest, salt, and garlic. When you are ready to serve, garnish with cilantro.
  8. Serve the wings on a platter with loads of wet wipes.
