Watermelon and Feta Skewers Recipe

Watermelon and Feta Skewers an easy appetizer that takes summer grilling in a gourmet direction. Kicking back in the summer heat with your besties and some locally sourced cider never tasted so good. I made these skewers to serve with the intention of whetting our friends’ appetites before the main course, and boy did it work! I was surprised at the complex flavors and textures. The watermelon lost its grainy texture and the feta took on an even creamier one and picked up an enticing smokiness. Punch it all up by drizzling balsamic reduction over the top and adding fresh basil.

small watermelon cut into 1-inch cubes

1 to 2 tubs

feta cheese in brine,
drained, cut into 1-inch cubes

1 handful

fresh basil

¼ cup 

balsamic reduction

12 

wooden skewers, 4-inches long, soaked

Method
  1. Soak your skewers while you cube your watermelon and feta cheese.
  2. Very carefully thread a watermelon cube onto the skewer followed by a feta cube and one more watermelon skewer. Feta is crumbly so you have to be careful when cutting and skewering it.
  3. Once all of your skewers are loaded, place them into the freezer for 15 minutes while you preheat your grill to 450°F.
  4. When the grill is up to temperature remove the skewers from the freezer and pat them dry with paper towel. Remember that moisture is the enemy of a good sear.
  5. Place the skewers on to the grill over direct heat. Grill each side for 1 to 2 minutes, or until grill marks are forming on the melon.
  6. Serve immediately, drizzled with balsamic reduction and topped with fresh basil leaves.
