Barbecued Chicken And Waffles Recipe

Have you ever tried Chicken and Waffles? They are so amazing, salty and sweet, the epitome of comfort food. When I first made this recipe in the summer of 2015, I went out and purchased an electric waffle iron. I was excited to have the ability to make waffles whenever I wanted. However, unless I was making BBQ’ed Chicken And Waffles, I really didn’t use it – too messy and hard to clean. What I really wanted. What I truly dreamed of owning. What I didn’t know if it existed – were cast iron waffle irons. Ones that I could place on the grill or the side burner and make my waffles right there. (And yes you can also use them on your stovetop. But, this is a BBQ blog and we talk about using the grill to cook here.) Anyway. Imagine my utter disbelief and joy at finding these cast iron waffle irons! I snatched them up as fast as I could and knew right away that I had to make BBQ’ed Chicken And Waffles again as soon as possible.

boneless skinless chicken breasts

2 cups

buttermilk

2 tbsp.

dijon mustard

2 tbsp. 

maple syrup

1 tbsp.

kosher salt


Chicken Breading:

1½ cups

flour

½ cup

seasoned bread crumbs or panko

2 tbsp. 

brown sugar

2 tbsp.

salt

2 tsp.

garlic powder

2 tsp.

cayenne

3 to 4 cups

oil for frying


Waffles:

3

½ cup 

butter, melted

1¾ cups

milk

1 tsp.

vanilla extract

1¾ cup

flour

1 tsp.

baking powder

3 tbsp.

sugar

2 tsp.

salt

1 tsp.

cinnamon

1 tbsp.

melted coconut oil or butter


Sriracha Syrup:

1 cup

pure maple syrup

1 tbsp.

sriracha hot sauce

fresh arugula and chives for serving

Method
  1. Prepare the chicken by slicing the breasts into tender-sized pieces. You may need to pound or butterfly any thicker portions to keep everything a similar thickness. 
  2. In a non-reactive dish, whisk together the buttermilk, dijon mustard, maple syrup, and salt. Marinate the chicken pieces in the buttermilk for at least an hour, up to 8 hours. 
  3. When you are ready to cook, begin by combining the breading ingredients, then whisking the egg and water together in a separate dish. Dip the brined chicken into the flour mixture, then into the eggs, and back into the flour mixture, coating well on all sides. Set the breaded chicken aside while you finish coating the other pieces. 
  4. Preheat your grill. Place your well-seasoned waffle irons over direct heat to preheat with the grill. Light the side burner, setting it to medium-high, and place your stainless steel wok over top. Add 3 to 4 cups of oil to heat. Use an oil or candy thermometer to watch the oil temperature, you are looking for around 350*F or so.  
  5. While the grill is preheating, stir together the sriracha and maple syrup. Make the waffle batter. Whisk together the eggs, butter, milk, and vanilla. Sift in the flour, baking powder, sugar, salt, and cinnamon. Stir to combine. 
  6. Now you’re ready to cook. Open the grill and brush the waffle irons with melted coconut oil or butter and then fill them generously with batter. Close the lids and cook for about 5 minutes, flip the iron over and cook another 3 to 5 minutes or until golden. Repeat until all of the batter is used.
  7. While the waffles are cooking, fry the chicken in batches, 2 to 3 pieces per batch. Deep fry in the wok until a deep golden color on both sides, then place on the warming rack of the grill to drain and keep warm. Repeat until all of the chicken is cooked.
  8. Serve everything hot off the grill with fresh chives and arugula, as well as loads of sriracha syrup. This is just as good with plain old maple syrup or honey too.

This week's BBQ’ed Chicken And Waffles turned out even better this time around. Whether it's the company we shared the meal with or the barbecue we cooked the Chicken and Waffles on. (Very likely a combination of both.) Either way, this meal was comforting as it was excellent. The savory chicken's saltiness, enhanced by the syrupy sweetness, made all the more enticing by the spice. 

Remember to exercise caution when deep frying anything. Bubbling and hot oil is no joke. However, when you deep fry outside using the side burner or SIZZLE ZONE™ you will make less of a mess and smell in the house - which is awesome when it comes to clean up.
