- 1 loaf good bread
- 3 cups (249 g) shredded cheese*
- 2 chicken breasts
- 3 tbsp. (21 g) BBQ chicken spice
- 1 cup (227 g) butter, softened
- 1 large onion, sliced thin
- 2 tsp. (10 g) sugar
Alabama White BBQ Sauce:
- 1 cup (250 ml) mayonnaise
- ¼ cup (60 ml) apple cider vinegar
- 2 tbsp. (30 ml) fresh lemon juice
- 1 tsp. (5 ml) Worcestershire sauce
- 1 tsp. (6 g) kosher salt
- 1 tsp. (6 g) garlic powder
- 1 tsp. (6 g) onion powder
- 1 tsp. (6 g) freshly ground pepper
- Optional dash of hot sauce/horseradish
*Any of the following or a mixture will provide great grilled cheese but just go with your favorite. Try gouda, cheddar, Monterey jack, young fontina, Havarti, or gruyere. For added stretch, slide in a little mozzarella.
- The sooner you make the Alabama white sauce, the longer the flavors have to meld together. In a bowl, whisk together the BBQ sauce ingredients. Set aside in the fridge.
- Slice the onion thin and grate the cheese(s) you have selected. Slice the bread if needed.
- Replace your cooking grids with a cast iron barbecue griddle. If you are planning on using a cast iron frying pan, place it on top the grids instead. Preheat the barbecue to 400°F (205°C).
- Add a tablespoon or two of butter to the preheated cast iron and throw down the onions. Cook for a few minutes before sprinkling with sugar. Cook until soft and jammy.
- While the onions are cooking, butterfly and season the chicken breasts with the BBQ seasoning. Grill the chicken over direct heat for 4 to 5 minutes per side, until charred and cooked through. Remove the chicken and shred it. Toss the shredded chicken in a few tablespoons of Alabama Sauce until well coated.
- Butter the outside of the bread on both sides, add a layer of shredded cheese to one non-buttered side of bread. Layer the saucy chicken, then cooked onions, and finally another generous helping of cheese.
- Turn the grill down and grill the sandwiches over direct heat either on the grids or on the griddle (or both) until golden on both sides and the cheese has melted. If the cheese isn’t melted, place the sandwiches to the side or onto a warming rack with a piece of foil over top until perfectly melty.
- Serve these savory sandwiches with your favorite sides like a salad, soup, pickles, or even chips and don’t forget more Alabama Sauce on the side for dipping!
