Homemade Pizza Dough
- 4 cups (500 g) 00 flour (sub all-purpose)
- 2½ tsp. salt
- ¼ tsp. instant dry yeast
- 1½ cups (350 ml) water at 95ºF (35ºC)
- Olive oil
- Cornmeal
You can also use premade dough from the grocery store
BBQ Chicken Pizza
- ½ cup (120 ml) tomato-based BBQ sauce
- 1 cup (125 g) leftover grilled chicken, shredded or chopped
- 1 small red onion, sliced thin
- 1 small green pepper (hot or sweet) sliced thin
- 1 cup (224 g) low-moisture mozzarella, shredded
Pizza Dough
- In a large bowl or the bowl of a stand mixer with dough hook attachment, add the flour and salt. In a measuring cup, whisk the yeast into the water. Add the water to the flour and mix until you have a shaggy dough.
- You can do this on a floured surface, however, it’s faster and easier to use the stand mixer to knead the dough on medium speed, or by hand, until the dough becomes a supple and bouncy mass. When you poke it, it will spring back almost immediately.
- You can now place the dough into an oiled bowl and cover with plastic wrap. Leave on the counter for 2 hours or overnight in the fridge for up to 120 hours.
- When it’s time to cook, divide the dough into 2 or 3 equal chunks. Shape the dough into small balls, rolling and tucking the edges under until a taut ball is formed. Place these balls onto a floured tray, and cover with plastic wrap or a tea towel and proof for 1 hour if you left on the counter and 2 hours if you put the dough into the refrigerator overnight.
- Once proofed, flour your work surface and press a dough ball down and out using your fingers or knuckles. Then, begin to stretch the dough out into the final shape.
Charcoal Grilled BBQ Chicken Pizza
- Fill your charcoal starter and light a full load of charcoal.
- Once the coals are ashed over, pour the charcoal into the grill, raking them into a circle or a semicircle. Lower your cooking grids and place a pizza stone in the center of the grids. Open the bottom vents wide. Preheat the barbecue to at least 500ºF (260ºC).
- While the charcoal kettle is preheating, coat your pizza peel or a cutting board or tray with cornmeal and transfer the pizza dough, re-stretching it out. Brush the crust with the barbecue sauce, cover with some mozzarella, top with chicken, sliced onion, and peppers. Add more cheese and sauce if you like.
- Add cornmeal to the pizza stone, then slide the pizza onto the stone. Close the lid and cook for 2 to 3 minutes, open the lid and spin the pizza 45 to 90 degrees, cook another 2 to 3 minutes. Repeat until the dough as become crisp and the cheese has melted.
- Carefully remove the pizza from the grill. Top with fresh herbs and slice it on a cutting board to serve.
