Pretzel Breaded Barbecue Baked Chicken Recipe with Southern Style Beer Cheese Dip

This easy recipe for Pretzel Breaded, Barbecue Baked, Chicken takes your comfort favorite and elevates them with a delicious brine, crunchy crust, and a delightful Southern Style Beer Cheese Dip that will knock your socks off! Baked instead of fried (though you can fry them instead) these chicken cutlets will leave you wanting more.   • 1 lb (454 g) Chicken thigh or breast meat
  • 2 cups (473 ml) buttermilk
  • 3 tsp. kosher salt
  • 2 cups (100 g or ½ to ¾ bag) salted pretzels, crushed
  • 1 tsp. freshly ground black pepper
  • 1 tsp. garlic powder
  • 2 eggs

Beer Cheese Dip

  • ¼ cup (59 ml) IPA Beer
  • ½ cup (42 g) extra sharp cheddar cheese, shredded
  • ½ cup (30 g) cream cheese softened
  • 1 tbsp. Dijon or grainy mustard
  • 1 tbsp. BBQ seasoning
Method
  1. Up to 8 hours before, combine the buttermilk and kosher salt. If you are using chicken thigh, you can skip this step. For chicken breast, slice the breasts in half like you would if you were butterflying, by slicing the chicken in half horizontally. Place the chicken into the buttermilk mixture and into the fridge for 2 hours and up to 8 hours. *Optionally, you can opt for the more traditional tenders look by cutting your chicken into strips before marinating.
  2. When you are ready to cook, place a pizza baking stone onto the barbecue and preheat your grill to 400°F (205°C) by turning on the outside burners to medium-high and the burner(s) under the stone to low. 
  3. While waiting for the grill to warm, prepare the crust for your chicken by combining the crushed pretzels, black pepper, and garlic powder. In a separate dish, crack and then beat two eggs. Remove the eggs from the brine and dredge them in the pretzels, then dip them in egg and back into the pretzels, pressing them firmly to make sure every inch is covered well. 
  4. Place a piece of parchment paper onto the baking stone, making sure that the edges don’t overhand too much, and then place your chicken onto the baking stone. Bake for 7 minutes, then check and flip them, baking for another 8 to 10 minutes more, or until the chicken reads an internal temperature of around 165°F (74°C). 
  5. While you are waiting for the chicken to cook, make your beer cheese dip. In a blender combine the beer, cheeses, and BBQ seasoning. Blend until smooth. Place the cheese sauce into a grill safe container and put it onto the barbecue near the chicken to warm while it finishes cooking, or serve cool-room temperature. 
  6. Serve your crispy chicken with your favorite seasonal sides like fresh green vegetables, a delicious and colorful salad, or baked potatoes, fully loaded naturally. Don’t forget to drizzle or dunk your chicken with that delightful beer cheese dip.
