Recipe for Fudgy & Chewy Guinness Brownies

After much market research… okay, I just polled my teammates in the office… we came to the conclusion that chewy brownies were the best, followed by fudgy-melty ones. This recipe for Fudgy & Chewy Guinness Brownies takes the best of both worlds and gives them a bit of a twist. Instead of the usual hot water and espresso powder treatment, the chocolate flavor of these brownies is enhanced with the deep dark delightfulness of Guinness beer. Get excited, and ready for St. Patrick’s Day, with these dense delights.

Recipe for Fudgy & Chewy Guinness Brownies

  • ½ cup (57 g) chopped baking chocolate
  • 1/3 cup (35 g) cocoa powder
  • ¼ cup (57 g) butter, melted
  • ½ cup + 2 tbsp. (148 ml) Guinness beer
  • 2 eggs + 2 yolks
  • 1½ cups (300 g) granulated sugar
  • 1 cup (213 g) brown sugar
  • 1 tsp. vanilla
  • 1¾ cups (254 g) flour
  • 1 cup (170 g) chocolate, chopped
  • Flakey sea salt to taste
  • Optional, caramel or peanut butter chips, potato chips – crushed, pretzels – crushed
Method
  1. Place a baking stone onto the barbecue and preheat the grill to 350°F (177°C) using all burners set to low.
  2. In a microwave-safe bowl, melt the chocolate gently. In a separate bowl, add the cocoa powder, melted butter, and Guinness, mix in the melted chocolate. Whisk in the eggs, one at a time, followed by the sugars, and vanilla. Finally, mix in the flour thoroughly, then fold in the additional chocolate or any mix-ins.
  3. Pour and smooth the batter into a 9 by 13-inch (23 x 33 cm) baking dish lined with greased parchment. You can also bake this in a large cast iron frying pan, just grease with butter or spray before adding the batter.
  4. Place the baking dish onto the preheated baking stone on your grill. Turn off the burners below the stone and turn up the ones to either side to ensure the heat remains constant. Bake for 30 to 35 minutes with the lid closed, or until a cake tester comes out mostly clean.
  5. Allow the brownies to cool in the pan once they have been removed from the grill. Then slice and serve. Consider filling a tall vessel with hot water and warming/wiping the blade between slices for cleaner cuts.
