Grilled Grapefruit Recipe

I can hear you hollering at the screen! How can Grilled Grapefruit with Homemade Cheesecake Ice Cream be a simple and easy recipe?! Well, it can! Here’s how! First of all, you make homemade ice cream the no-churn way. Just 4 ingredients and whip it good, then toss that into the freezer. Done! When ready to serve, slice yourself a grapefruit and grill on a piping hot BBQ. Serve hot with ice cream! BOOM! This is one easy dessert.

grapefruit, preferably sweet Oro Blanco, however any grapefruit will do

2 tbsp. 

sugar

A dash

fresh mint for garnish


No Churn Cheesecake Ice Cream

2 cups 

whipping cream
(Try using smoked cream)

1 tbsp. 

vanilla extract

1 can  (300 ml / 1¼ cups) 

sweetened condensed milk

1 cup 

whipped cream cheese

Method
  1. Before you begin, place a metal or glass bowl and the beaters into your freezer while you gather the ingredients. This will make whipping go faster.
  2. In a medium bowl, combine the vanilla, condensed milk, and whipped cream cheese. Use whipped cream cheese because it is light and fluffy already and won’t leave chunks in your mixture. Beat these together until smooth.
  3. In the frozen bowl, whip the cream on high until soft peaks form. Gently fold in the cream cheese mixture. Place them into a loaf pan, or leave in the bowl and chill for at least an hour or until set.
  4. When ready for dessert, preheat your grill to 500°F+ for searing. Slice the grapefruits in half and sprinkle with a little sugar.
  5. Grill over direct heat, face down, until grill marks form, then turn off the grill and place the grapefruits face up on the warming rack for 5 minutes.
  6. Once fully roasted and delicious, transfer the grapefruit to serving dishes and carefully cut around the edge and cut out the lobes. Serve hot, topped with homemade cheesecake ice cream and mint for garnish.

The trick with this recipe is to get sweet grapefruits. As stated above, you preferably want the Oro Blancos, however, you can get ruby-reds that are sweet which is what I had to do. To check for sweetness just feel for a thin feeling skin and plump, firm innards. This easy recipe for Grilled Grapefruit with Homemade Cheesecake Ice Cream was a complete delight.
