Shrimp Scampi Recipe
One of my husband’s favorite things to order when we go out to a seafood restaurant is shrimp scampi. For a treat, I made this recipe for Shrimp Scampi and added a bit of a grilled twist. Let me tell you, the smokiness from the grill just adds that little extra to take a fantastic meal to the next level. The Napoleon Stainless Steel Wok is a great accessory too, one of the top five in my grill-accessory-arsenal. It’s perfectly suited to tossing the pasta and shrimp together to get everything perfectly coated and saucy.
Shrimp Scampi Recipe

8 to 10 oz.
uncooked spaghetti or fettuccini pasta
16 to 20
large shrimp, shelled and de-veined
2 tsp.
pepper
1 tsp.
grated citrus peel (lemon, lime, orange, grapefruit, or a combination of all three)
¼ tsp.
dehydrated garlic
salt to taste
3 tbsp.
butter
3 tbsp.
olive oil
4 cloves
garlic, sliced thin
½ cup
dry white wine like sauvignon blanc
1 tbsp.
dried parsley
¼ cup
fresh grated parmesan cheese
freshly ground salt and pepper to taste
½
lemon, freshly squeezed
red pepper flakes (optional)
- Cook pasta until it’s just a little less than al dente, you want it slightly undercooked so that it will finish in the Wok. Reserve a ½ cup of pasta water.
- Preheat your grill to 400°F.
- Season the shrimp with pepper, grated citrus peel, garlic, and salt to taste. Grill the shrimp over direct heat until they’re nearly done, about 3 minutes per side.
- While the shrimp are grilling, melt the butter and oil in the Napoleon Stainless Steel Wok, over medium-low heat, on your side burner. Add the garlic and the optional red pepper flakes just before you’re ready to add the shrimp so that it doesn’t overcook.
- Remove the shrimp from the grill and add them to the garlic and butter, tossing to coat. Pour in the wine and cover the wok for 2 to 3 minutes while everything simmers.
- Add the pasta, parsley, and parmesan to the wok, tossing to combine. If there’s not enough liquid, you can add the pasta water, a dribble at a time, until everything is smooth and coated.
- When you’re ready to serve, add salt and pepper to taste, and then squeeze the fresh lemon over top. Garnish with additional parmesan cheese.
This recipe for Shrimp Scampi came together faster than expected. It’s fun and fancy, easy to make for a dinner party or a fast weeknight meal. Either way, you’re going to love this meal. I know this is going to make it into the regular rotation. What’s your favorite easy meal to make on the grill?
