Using one of my favorite grilling techniques, the reverse sear is an easy way to ensure the best results. Whether it’s for Valentine’s Day or just a special meal for two, this recipe is sure to impress.

1
tomahawk steak, approx. 2.5 lbs
2 tbsp.
ClubHouse La Grille Steakhouse Onion Burger Seasoning
1 tbsp.
Club House La Grille Montreal Steak Spice
1 tbsp.
ClubHouse Signature Blends Garlic Plus Seasoning
1½ cups
Napoleon Hickory Wood Chips
- Preheat your grill to between 250°F and 300°F, preparing to use the indirect grilling method by lighting the two outside burners.
- In a small bowl, mix the spices together. Season both sides of the tomahawk steak with the seasoning mixture, pressing it into the meat.
- Insert the probe of the Napoleon Wireless Digital Barbecue Thermometer into the center of the meat. Set the doneness level on the thermometer to around ten degrees less than your final desired doneness level. Place the wood chips into a Stainless Steel Smoker Tube.
- Place the meat on the grill between two lit burners. Place the filled smoker tube over a lit burner.
- Slowly cook the tomahawk steak for about an hour and twenty minutes, or until it nearly reaches the desired internal temperature.
- Once the steak has reached that temperature, preheat your infrared SIZZLE ZONE to high. If you don’t have a side burner, turn one of the lit burners up to high and ignite the one beside it, turning that burner to high as well. Remove the steak from the grill, allowing it to rest while your grill preheats.
- Sear the tomahawk steak for 1 to 2 minutes per side over high heat until satisfying sear marks form.
- Serve this sliced and hot off the grill with your favorite side dishes like baked potatoes and veggies.
There’s something to be said about preparing a special meal for someone, and bringing the big caliber wow of a tomahawk steak will win the evening. What do you cook for your special someone?
