- 6 medium russet potatoes, sliced thin
- 4 tbsp. oil
- Salt, pepper, and paprika to taste
- 2 cups (500 g) pulled pork in sauce
- 2 cups (470 g) shredded cheese, use a mix of your favorites
- ½ red onion, sliced very thin
- 2 jalapeno peppers, sliced
- 2 green onions, sliced
- ½ cup (123 g) sour cream
- 4 slices bacon, cooked crisp, crumbled
- Replace your cooking grids with the 2-Sided Porcelain Enameled Cast Iron Griddle. Preheat your barbecue, igniting the burners under the griddle to medium.
- Give your potatoes a good scrub and then slice them as thin as possible using a sharp knife or mandolin. Season the sliced potatoes with salt, pepper and paprika to taste. Prepare the remaining ingredients.
- Spread some of the oil onto the griddle and, in batches, fry the potato slices on each side until crisp.
- Once done, preheat the barbecue to around 400°F (200°C).
- Layer the potatoes, cheese, pulled pork, onion, and jalapeno onto a stainless steel pizza pan with a layer of oil or parchment. Top the pile of potatoes and pork with a healthy helping of cheese on top.
- Bake on the barbecue, with the lid down, for 10 to 20 minutes, or until everything is hot, melty, and bubbling.
- Remove from the grill and top with sour cream, green onion, and optional bacon bits. Serve immediately.
